Aroma
Aroma is one of the most important parts of the coffee experience. Before brewing, you can already smell the coffee grounds. Once hot water is added, heat and extraction release more volatile aromatic compounds, creating a different and often more expressive aroma.
That is why tasting coffee is not just about what you taste on your tongue. Your sense of smell plays a major role in how you experience the cup.
Acidity
Acidity in coffee does not simply mean “sour”. In specialty coffee, acidity often describes the bright, lively, and refreshing character of a coffee.

When people describe a coffee as having complexity or layers, they are usually referring to the way different aromas, flavours, and sensations appear and interact throughout the cup.
For example, a coffee may begin with bright fruit acidity, develop sweetness in the middle, and finish with a lingering aftertaste.
These changes are part of what makes coffee tasting so interesting.
Understanding Coffee Processing
Natural Process
In the natural process, coffee cherries are dried while much of the fruit still surrounds the seed. As the cherries dry, the coffee beans remain in contact with the fruit for an extended period. This method often results in pronounced sweetness, fruit-forward flavors, and sometimes unique fermentation characteristics.
Washed Process
In the washed process, the outer fruit is removed before the beans are fermented, washed, and then dried. This approach typically produces a cleaner and more defined cup, allowing the acidity and origin characteristics to stand out more clearly.
Honey Process
Honey processing falls between natural and washed processing. After the outer skin is removed, some of the sticky fruit layer, known as mucilage, is left on the beans during drying. The amount of mucilage retained can vary, resulting in different styles of honey processing that influence the coffee’s sweetness, acidity, and overall character.
